Sliced roasted beets, arugula, goat cheese, pecans, & maple dressing
Toss greens with dressing serve in center of dish with beets around as shown garnish with pecan, cheese and oil
Gluten Free Item & Vegetarian item
Steak Tartare
Flash fillet in flame very quickly before cutting beef just to ‘torch outside’
Caper dressing, red pepper, Dijon & crostini garnish in chives and serve as shown
Greek Salad
Baby tomato, kalamata dust, feta, toasted oregano, red pepper, cucumber and a cucumber emulsion – toss in dressing and serve as show
Seared Scallops
Cauliflower puree, raisin emulsion & cress
Sear scallops plate as show with roasted cauliflower & cress
Truffle Burger
8oz gr chuck burger, black truffle stuffed brie, mushroom jam, lettuce, tomato, pickle on side
Serve as shown with choice of side
Serve with ketchup & mustard
